Ingredients

1 onion, diced
1 red bell pepper, diced
4 garlic cloves, minced
2 tsp paprika
1 tsp cumin
1 can of tomatoes
6 eggs
salt and pepper, to taste
1 small bunch fresh cilantro or parsley, chopped

Instructions

Step 1

Heat olive oil in a large skillet/ pan on medium heat. Add the chopped bell pepper and onion and cook until the onion becomes translucent. Add garlic and spices and cook for 1 minute.

Step 2

Pour the can of tomatoes into the pan, and break down the tomatoes. Season with salt and pepper and bring the sauce to a simmer.

Step 3

Use your large spoon to make small wells in the sauce and crack the eggs into each well. Cover the pan and cook until the eggs are done to your liking.

Step 4

Garnish with chopped cilantro, parsley, or whatever fresh herbs you have on hand. Top with crumbled cheese, avocado, and dip with bread!
