Spring Style Beef Stir-Fry (Prepared)

12 ounces boneless beef, cut into strips
nonstick spray
2 cloves of garlic, minced
1 medium yellow summer squash, halved & sliced
2 cups fresh broccoli cut into bite-size pieces
1 teaspoon cooking oil
1 cup cherry tomatoes, halved
1/3 cup reduced-calorie or non-fat Italian dressing
4 green onion, thinly sliced
6 oz. cooked fettuccine or linguine
1 tablespoon finely shredded Parmesan cheese, optional


Step 1

Trim fat from beef. Thinly slice beef across the grain into bite-size strips.

Step 2

Spray a wok or large non-stick skillet with non-stick spray coating. Heat over medium heat. Stir-fry garlic for 15 seconds. Add squash & broccoli, stir-fry for 4 to 5 minutes or until crisp-tender. Remove veggies from wok.

Step 3

Add oil to wok. Add beef to wok. Stir-fry for 3 to 4 minutes. Return veggies to wok. Add cherry tomatoes, salad dressing & onion greens. Mix. Cover and heat through.

Step 4

Serve beef mixture over hot pasta. Sprinkle with Parmesan cheese, if desired. Enjoy this delicious Spring Sensation!
