Orange Rice & Red Lentil Pilaf (Prepared)

2 tablespoons butter
1 onion, chopped
1 clove garlic, minced
1/2 cup parboiled rice
1/2 teaspoon curry powder
3/4 cup chicken stock
3/4 cup unsweetened orange juice
1/2 cup split red lentils, rinsed & sorted
1/4 cup raisins
1/2 teaspoon grated orange rind


Step 1

In saucepan, heat butter over medium-high heat; cook onion and garlic until softened, about 3 minutes. Stir in rice and curry powder; cook, stirring, for 1 minute.

Step 2

Add chicken stock and orange juice; bring to boil. Reduce heat to low and cook, covered, for 10 minutes.

Step 3

Stir in lentils; cover and cook for 10 to 15 minutes, stirring halfway through, or until lentils and rice are tender and liquid has been absorbed. Let stand, covered for 5 minutes. Stir in raisins and orange rind.
