Orange Drizzled Cake Slices
6 slices angel cake or pound cake
1/4 cup granulated sugar
1 tablespoon cornstarch
1 cup orange juice
1 tablespoon butter
2 teaspoons lemon juice
1 teaspoon grated orange rind
Shredded coconut (optional)
Orange Sauce: In a small saucepan, mix together sugar and cornstarch; blend in orange juice. Cook over medium heat until mixture thickens and comes to a boil.
Remove from heat; stir in butter, lemon juice and orange rind. Let cool slightly.
Arrange cake slices on baking sheet and broil until lightly toasted, if desired. Transfer to serving dishes and pour orange sauce evenly over tops. Sprinkle with coconut (if using).
