Lemon Pork Chops
4 pork chops, approx. 1 inch thick
4 lemon slices
1 onion, sliced, separated into rings
Salt and pepper to taste
1/2 cup ketchup
1/2 cup chicken stock
Dry pork chops with a paper towel.
Heat a covered non-stick fryer or flat roaster over medium heat until hot. Remove cover. Brown the chops well on both sides, about 3 minutes. Top each chop with a lemon slice, add the onion, salt and pepper.
Meanwhile, combine the ketchup and chicken stock. Pour over the chops. Cover and reduce heat to a low setting. Cook for an additional 20 minutes, turning the heat off for the last 10 minutes. Serve the chops with sauce in the pan.
