Cauliflower Au Gratin

Cauliflower Au Gratin (Prepared)

4-6 as a side dish.


1 head of cauliflower, green stems removed, broken into florets
1 1/2 cups evaporated milk
2 tablespoons butter
2 tablespoons all-purpose flour
2 cups grated cheddar cheese
Salt and pepper to taste
For optional topping:
1 ½ cups panko
1-2 tablespoons melted butter


Step 1

Preheat oven to 375F.

Step 2

In a pot of boiling water cook cauliflower until just tender. 5 to 7 minutes
Gently mash with a potato masher.
Set aside.

Step 3

In a saucepan over medium heat melt butter. When the foam subsides, add flour and stir until combined.

Step 4

Very slowly add milk, whisking thoroughly after each addition so that the sauce stays smooth and there are no lumps in it. After all milk has been added cook, stirring constantly over medium heat until sauce has thickened.

Step 5

Put enough sauce to cover the bottom of a 6x6x3 inch deep casserole dish. Add a quarter of the mashed cauliflower to the dish, covering the sauce. Add enough cheese to lightly cover the cauliflower. Continue layering in this way until all of the cauliflower is in the dish. Cover with the remaining sauce and cheese.

Step 6

Optional Crunchy Topping
Combine topping ingredients and sprinkle them on top of the casserole.

Step 7

Bake uncovered for 35-40 minutes or until topping is golden brown and sauce is bubbling.
