Cantonese Pork Chops
Ingredients
6 loin pork chops
1 can apricot halves, drain & reserve juice
2 tablespoons soy sauce
1 clove garlic, crushed
1/2 teaspoon powdered ginger
1-1/2 cups diagonally sliced celery
1 onion, finely sliced
Salt and pepper
Hot cooked rice
Instructions
Step 1
Dry the chops. Heat a covered fryer over medium heat. Remove cover and brown the chops well on both sides. Pour off any excess fat.
Step 2
In another bowl, combine apricot juice, soy sauce, garlic and ginger. Add to the chops, cover and reduce heat to a low setting. Simmer for 25 minutes, or until chops are tender.
Step 3
Add celery and onions; cover again and simmer for five minutes more, or until celery is just tender.
Step 4
Just before serving, add apricots and cook until heated through. Season sauce to taste and serve with hot cooked rice. Enjoy!
