Baked Pasta with Sausage Ragu

Step 1
Cook pasta according to package directions. Set aside when done.
Step 2
Heat olive oil in a skillet set over medium heat. Add sausage meat and cook stirring often. Remove from pan when fully cooked. Do not drain the pan.
Step 3
Add green pepper, red pepper, mushrooms, zucchini and garlic to pan. Cook stirring frequently until vegetables begin to soften. Drain fat from mixture.
Step 4
In a Dutch oven combine cooked sausage meat, vegetable mixture, passata, dried basil, salt and pepper. Mix well.
Step 5
Bring to a boil over medium high heat. Cover and reduce heat to medium-low and simmer for 30 minutes.
Step 6
Preheat oven to 400F. Mix pasta with sauce and put half into a casserole dish. Top with half of the grated mozzarella and Parmigianio-Reggiano cheeses
Step 7
Put the remaining half of the pasta into the casserole dish. Top with the remainder of the mozzarella and Parmigiano-Reggiano cheeses.
Step 8
Bake for 25-30 minutes or until sauce is bubbling and cheese is melted and slightly browned on top.
