Anything Goes Fried Rice
Ingredients
1 tbsp of whatever oil you have on hand
¼ white onion, diced
1 cup of whatever veggies you have in the freezer or fridge
2 cups leftover or fresh rice
2 eggs
1 tbsp soy sauce
1 green onion, chopped
Protein of choice
Instructions
Step 1
Prep your onions and fresh veggies if using and make rice ahead of time if you don’t have any leftovers on hand. Heat oil on medium-high heat, once hot add white onion and veggies, and cook until fragrant.
Step 2
Add rice and break up into veggies. Once the rice is warm, push to one side and add eggs. Scramble egg on the other side. Once the egg is scrambled, mix together with rice and add soy sauce.
Step 3
Add in green onion and mix well. Remove from heat and serve with your choice of protein or on its own!
